This is the same rescued 2019, given five more months in chestnut. The extra time made it the deeper of the two, and the fuller. Dark fruit and ripe plum, toasted nuts, a thread of leather, then clove and black pepper, and a mineral note at the end like wet slate. The finish is long and savoury, closer to jamón ibérico de bellota than to anything sweet. There are 228 bottles, and there will be no more.

New bottlings are sealed with wax from our own bees.

FROM THE BODEGA

We make wine in Ribeira Sacra, where slate, granite and slopes above the Sil give Mencía its edge. The grapes are picked by hand and brought down in small crates. Nothing chemical touches the vines; plants, flowers and the living rows are part of the work.

FROM THE SLOPES

The slopes make you slow down.

The terraces rise above the Sil. Each grape comes down by hand, and the slate under the vines gives the wine its mineral edge.
