Mencía with a little Garnacha Tintorera, from the terraces above the river. Cherry reaches you first, then raspberry and violet, a thread of cedar from a light touch of wood, and wet stone under all of it. It goes in bright and keeps moving, and the tannin is there without getting in the way. Give it fifteen minutes in the fridge before you pour and it sharpens. Best Young Wine at the XLIV Feira do Viño de Amandi, and Oro+ in the Guía de Viños de Galicia.

Store the bottles on their side, somewhere dark and cool. Once open, put the cork back and finish it within three days.

FROM THE BODEGA

We make wine in Ribeira Sacra, where slate, granite and slopes above the Sil give Mencía its edge. The grapes are picked by hand and brought down in small crates. Nothing chemical touches the vines; plants, flowers and the living rows are part of the work.

The slopes make you slow down.

The terraces rise above the Sil. Each grape comes down by hand, and the slate under the vines gives the wine its mineral edge.
