One parcel in Amandi, picked by hand at the September full moon. We sorted the bunches in the vineyard, let them ferment on their own native yeasts, and added no sulfites at all: there are 7 mg per litre, only what fermentation makes. Open it half an hour before you pour. Blackberry, raspberry and cherry, with fresh herbs and flowers underneath. In the mouth it is velvet first, then the tannin Mencía is known for.

Drinking window: Now through 2037.

Store the bottles on their side, somewhere dark and cool. Once open, put the cork back and finish it within three days.

FROM THE BODEGA

We make wine in Ribeira Sacra, where slate, granite and slopes above the Sil give Mencía its edge. The grapes are picked by hand and brought down in small crates. Nothing chemical touches the vines; plants, flowers and the living rows are part of the work.

The slopes make you slow down.

The terraces rise above the Sil. Each grape comes down by hand, and the slate under the vines gives the wine its mineral edge.
